Last night the ten year old made cookies. His 4H cooking class was scheduled to make these Monday, but we are out of town, so his leader generously sent us the recipe and we made them at Grammy's house. The cookies were excellent.
Here's the recipe.
The Perfect Chocolate Chip Cookie
1/2 c. unsalted butter at room temperature
1/2 c. Crisco
1 c. brown sugar
1 cup minus 2 T. sugar
2 large eggs
1 1/2 t. vanilla
2 3/4 c. flour
1 t. baking soda
1 t. salt
1 1/2 c. chocolate chips (or m&m's, nuts, or toffee bits, or 3/4 c. white chocolate chips and 3/4 cup macadamia nuts or craisins)
Cream the butter and Crisco until fluffy, add sugars and cream until smooth, then add eggs and vanilla, mixing well. Add dry ingredients. Stir in chocolate chips or whatever extras you choose. Drop on cookie sheet in balls, bake at 375 for 8-10 minutes.
He also made a batch for his allergic-to-everything brother. These are our typical, no measuring cookies - mashed bananas, oatmeal, cinnamon and raisins. I added a touch of brown sugar this time, but they don't really need it.
If you make these, you have to flatten them out into the cookie shape you want. They don't spread at all.
